Fingerling Potatoes

Fingerling potatoes are from a family of potatoes that grows smaller and more elongated than conventional potatoes. As indicated by their name, they generally have a finger-like shape. Fingerlings tend to have a thin skin and are grown to full maturity allowing them to develop a full, complex flavor.

Due to their small size, thin skin, and complex flavors, fingerlings are usually best roasted or broiled and served whole.

Like conventional potatoes, there are many different varieties of fingerling potatoes, the most common being the Russian Banana Fingerling.
